Our 'Fire & Ice' ice cider is made from a slightly modified base from our original ice cider which is then aged in oak barrels recently containing Bourbon whiskey for a minimum of twelve months. This unique aging process helps harmonize the delicious apple notes with the bold notes of caramel and toasted vanilla. An ice cider of a truly exquisite standard and, as always, made only from apples ripened and frozen on the tree.

Production method
Cryo-extraction – Production of this quality ice cider begins in January/February, when the apples that have frozen on the tree are picked. Still frozen, they are then slowly pressed to extract the highly concentrated and deliciously sweet nectar. The nectar is then carefully fermented for several months. When the desired balance between sweetness and acidity is achieved, we stop fermentation and continue aging in ex-bourbon oak barrels for at least twelve months before bottling.
Tasting tips
Serve chilled between 10°C and 12°C
To be enjoyed as a dessert or as a digestive. Goes wonderfully with fine cheeses and dark chocolate.
